This is a classic apple cake with a twist. You can find the recipe on page 125 of Southern Italian Desserts by Rosetta Costantino or … almost every recipe for this on google is actually in Italian, so if you want to make it, you’ll need to buy the book or translate.
Basic cake ingredients…flour, salt, eggs, sugar, vanilla and baking powder with a cup of ricotta thrown in for some added fluff and moisture.
I do suggest using a mandolin to slice the apples for the top, if you have one, to get the slices even. Of course maybe you are one of those people who can evenly slice apples to perfection. I’m not. Even with the mandolin I sliced some way too thin, but I ended up just rolling them into a semblance of a rose and plopping it in the middle.

We all agreed that a glaze would have been nice to brush over the top for some shine. This is not a very sweet cake, most of the sweetness comes from the apples. That’s pretty much it folks, no mess up or mishaps this time.
A drizzle of caramel sauce and some vanilla bean ice cream! I probably could have cooked mine a little more.

Thank you Aunt Mona 🙂 Sorry it took me so long to reply. Computer issues, job issues, house issues, internet issues…..all really no excuse, just led to frustrations that kept me away from writing. Things are looking better, and hopefully that translates into me posting more often…already three months behind on the baking. We did do every month. Well, except August, not sure what happened to August, but we all forgot and then it was September!
