
Scandinavian Princess cake looked challenging yet doable, so begins challenge month number 1.

Well, actually no, it was awful! Not all of it, the vanilla bean pastry cream was delicious, but the cake itself…bleh! I admit to not doing everything exactly as the recipe says in an effort to keep waste to a minimum. Martha says to bake the batter on a sheet pan, then cut out 4 circles. Keep the best three for the cake and toss out the remaining circle and cake bits. Nope, sure didn’t do that, used three 9″ cake pans.
Cake had a very weird texture and flavor….dessert frittata maybe? Eric said his was the same…it tasted “eggie”. Of course there are 6 eggs plus 4 yolks in it that are whipped into a frenzy, thus the egginess.
This was my first time working with Marzipan and I rolled it way to thin, overcompensating for the fact that I was using 9′ rounds and Martha used 8″. But there was no going back once I set it on all that whipped cream and it started oozing like a green and white lava flow. Sorry, no picture of that, I was to busy wildly applying marzipan patches in an effort to staunch the flow.

Obviously Eric wins challenge 1 on looks alone, but his didn’t taste good either. I swear, I usually have a lot more success at baking. Would it be wrong to blame Martha?
