Love cinnamon? You’ll love these fluffy little nuggets on page 156 of Southern Italian Desserts by Rosetta Costanino. If you don’t love cinnamon….move on, nothing to see here. I couldn’t find the exact recipe online, but this one is close https://www.eatthelove.com/best-christmas-cookie-recipe/ take out the eggs, cloves and turn the 2 oranges into 1 lemon and you have the dough recipe. For the glaze, again switch the orange for lemon and drop the booze….and you have it.
This is a very simple little recipe that caused me issues in the first step (mix everything together)…of course.
Me: my dough is really dry…was yours?
Eric: No mine was pretty sticky
Alex: Mine was really dry
Eric: Weird. Wonder what I did differently
Alex: don’t know, I just followed the directions
Not exactly helpful, so I just slowly added milk til it stuck together enough to roll into logs. I tried to take photos of the dough from all angles and at different stages during rolling, but they were all….unappetizing to say the least. I did include the one least offensive to my gag-reflex so you could get the jist of the matter. You should have seen my hands!
After quickly slicing into 1 inch (or somewhere there abouts) and baked, they looked like little cakes and it’s okay. You’ll notice Eric’s are white, mine are not. Because his dough was sticky, he had to use more flour when rolling.
Mine before baking…. …and after
Eric before baking… …and after
Tossing in the icing my final cookie
Alex final Eric final
Still working on getting those pictures from Alex! Even though these are cookies, they have a cakey texture and a powerful punch in the cinnamon…excellent with a cup of coffee or tea. I admit, I didn’t put the lemon juice in the icing, I used vanilla. The cinnamon lemon flavor combo didn’t sound remotely tasty to me. But Eric and Alex used it and said it was good. I’m glad I tried these, but probably won’t make them again unless I know a cinnamon fanatic who needs cookies. Have a great day!
