Never heard of it? Me neither, but my husband called them “little bites of love”. Glad he liked them because he’s the one that picked the recipe. Since bake day was the day before his b-day we decided he could pick. They are Portuguese tarts that fall in the medium range of difficulty, only because you have to make a puff pastry. However, if you want to slide that difficulty level to the easy side, you can use frozen puff pastry. Don’t know if it’ll be as tasty, but it’s an option.
The recipe is on page 247 of The Great British Bake Off Perfect Cakes & Bakes to Make at Home Cookbook or on Pinterest, just look for Paul Hollywood’s recipe.
No, ours don’t look as good as Paul’s, but we didn’t have professional photographers or 30 years of baking experience. Besides, it’s the taste that counts right? And these were fantastic! (Although, I suppose I do need to step up the photography skills.) Actually the picture in the cookbook looks more like ours than Paul’s…not as shiny.
Love my new digital scale! The recipes in this cookbook are in grams, this scale makes it so much easier because I don’t have to convert anything. I also decided to shred the butter this time while making the pastry. I saw someone on the show do that and it worked much better for me, easier to distribute the butter evenly.
Slather on the last bit of butter, and roll it up! Equal portions are important…only so much room in those mini-cupcake pans.
I finally got to use that wooden thing I bought from Pampered Chef about 20 years ago to spread the pastry in to the tins. I may have used it in the last 20 years, but I truly do not remember it.
No blind baking for these, make your custard, fill the shells and in to the oven they go! I did have a slight panic attack when I checked on them. It looked like all the butter was coming out and everything was bubbling (see right picture below). I had to check with Eric. His did the same thing, of course just because we both had the same thing going on doesn’t mean it was right 😉
Let them cool, and pop them in your mouth. But I warn you, they are very addictive. And small, seems like you’re hardly eating anything, and then they’re gone! A successful bake in March. Hmm, seems to be that only every other month is successful. Not a good sign for the Cardamom Lemon Buns we’re making in April. they look like little yellow whoopie pies, pretty excited!
